Seven Layer Dinner

A quick, easy meal that looks like a shipwreck by the time you serve it.

Ingredients
  

  • 1 onion, diced
  • 2 carrots medium, sliced
  • 2 potatoes medium, sliced
  • 1 can peas
  • 1 cup rice, uncooked
  • 1 can tomato soup
  • 1 can water
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375.
  • Diced the onion and sauté briefly, until a bit soft.
  • Place onion in a medium-to large casserole dish.
  • You may add salt and pepper to each layer, if desired.
  • Slice carrot and arrange in a layer above onion.
  • Slice potato and arrange in a layer above carrot.
  • Spread the peas over the potato layer.
  • Spread rice over the peas.
  • Mix the can of tomato soup and a can of water together. Pour over other layers.
  • Arrange sausages or ground beef on the top.
  • Place cover on casserole dish and place on middle rack in oven for 45 minutes.
  • Take cover off for the last 15 minutes so that the meat can brown up.
  • The casserole is done when a fork can easily go through the potato and carrot layers.
  • Take out of oven and let rest for 15 minutes before serving.
