Called ‘Shipwreck’ in the Treasury of Newfoundland Dishes, perhaps because of how the finished product looks, this casserole is a Newfoundland staple. It consists of seven layers of ingredients, starting with a layer of onions and followed by sliced carrots, potatoes, peas, rice and a tin of tomato soup and water. To top it off, a layer of breakfast sausages or ground beef are added and then it’s baked in the oven. To make it vegetarian, Beyond Meat sausages can be used- they work really well. Seven-layer dinner is really simple, its tasty and it’s one of my all-time favourite Newfoundland dishes.
